- 1/2 packet Kuey Teoh/ flat noodles
- 1 bulb garlic ( finely chopped )
- 8-10 peeled shrimps
- 1 Chinese sausage ( sliced thinly )
- 80g cockles, scaled and shelled ( I skipped this )
- 80g beansprouts
- 50g Chivas, cut into 3cm lengths ( I skipped this )
- 2 eggs ( beaten )
Seasoning:-
- 1 tbsp light soy sauce
- 1 tbsp Chili Paste ( I used Sambal Oelek )
- 1/2 - 1 tsp dark soy sauce
- Salt and white pepper to taste
- 2 tbsp cooking Oil
- Some water
- Heat up the wok with cooking oil and fry garlic until light brown.
- Add in Chinese sausage,shrimps and cockles. Stir fry well.
- Add in Kuey Teow, dark soy sauce, light soy sauce and sprinkle a bit of water. Stir fry the Kuey Teow quickly until all ingredients well mixed.
- Spread all ingredients around the wok and create an empty space in the centre, then crack the eggs into it and add a little more oil. Fry the eggs til half cooked.
- Cover the eggs with all the ingredients and stir-fry evenly.
- Add in chili paste as desired and mix in a handful of chives.
- Sprinkle some white pepper and mixed well.
- Turn off the heat and serve warm.
